Snow cookies (Reduces winter cabin fever)
Materials:
- Large bowl or 6” deep washing bucket.
- Snow
- Very small metal molds (can be purchased in any home and kitchenware store).
- Dark chocolate
- Pure coconut fat
- Superfine sugar
- Vanilla extract
- Instant coffee (Optional, but it’s less caffeine than a coke and adds a delicious mocha flavor).
In a double boiler, melt 3 ounces of coconut fat with 1 tablespoon of superfine sugar. In a cup, mix 1 tablespoon of vanilla extract with 1 teaspoon of instant coffee. Stirring constantly, slowly add to coconut and sugar mixture. Add 8 – 10 ounces of dark chocolate. Keep stirring until all ingredients are well blended together. Turn off heat. (If you use 2 pots as a double boiler, be sure water level is low enough to avoid spilling into mixture, it will damage the smooth consistency). Fill bucket with snow. Remove chocolate mixture from stove. Wrap a kitchen towel around double boiler to protect children from burns. Place on hot pads in middle of table. Give each Child a spoon and a few molds. Supervise and coach children to fill each mold with chocolate and place them on the top of the snow gently pushing the molds slightly into the surface. Watch as they harden. Using the handle side of the spoon, carefully push chocolate mold out of mold casing and place them face up on a plate. Continue process until all the chocolate is finished. Place in refrigerator, eat, enjoy, or save for a family get-together.
